Cranberry-Apple Kale and Quinoa Salad

If you enjoy a combination of great flavors and textures, this salad is for you!  The almonds add a nutty flavor; the green apples a tartness; and the dried cranberries a sweetness.  Their individual flavors are beautifully tied together in a base of fresh kale and quinoa.  The honey vinaigrette adds just the right touch to enhance each bite of this delicious salad.  It's always a hit!


"Sweet cranberries, tart apples, crunchy almonds and healthy kale!"

INGREDIENTS:
1/4 cup olive oil
3 teaspoons red wine vinegar
2 Tbs. honey
Sea salt
8 cups kale, ribs removed and coarsely chopped
1/2 cup dried cranberries
1 cup green apples, cored and chopped into 1/2” chunks
1/2 cup red onion, chopped
1/2 cup almonds, sliced
2 cups cooked quinoa, (about 1 1/2 cups dry)

PREPARATION:

1.     In a small bowl combine olive oil, red wine vinegar and honey.  Sea salt to taste.

2.     In a large bowl combine kale and dressing.  Toss to coat well.  (It’s best to let sit for 15 minutes.)

3.     Add cranberries, green apple chunks, red onion and almonds.  Toss well to mix all ingredients.

4.     Add the quinoa; gently toss again.

5.     Serve and enjoy!
